竹笋是竹子的幼芽。在毛竹生长过程中,不同季节产生三种笋,即冬笋、春笋、鞭笋。冬笋并不是真正意义上“冬天的笋”,而是地下鞭芽发育膨大还未出土的春笋,即“冬笋是春笋的雏形,春笋是冬笋的延续”。鞭笋是指毛竹地下鞭的先端部分向前生长,在夏季长出的幼嫩鞭梢。

九华山盛产毛竹,每当冬、春季节,笋芽出土,山民们便将部分不易成竹的笋芽采回,并加工成笋干、笋尖、笋衣或笋片。竹笋味鲜可口,历来为九华山名优特产。

During the growth process of moso bamboo, three kinds of bamboo shoots are produced in different seasons, i.e. winter bamboo shoots, spring bamboo shoots and rhizome shoots. Winter bamboo shoots are not bamboo shoots that grow only in winter, but bamboo shoots harvested when they have not yet come out of the ground, while spring bamboo shoots are harvested after they come out of the ground. Rhizome shoots are the young apexes that grow out in the summer from the tips of the subterraneous stems of the moso bamboo.

Jiuhuashan is rich in bamboo, and every winter and spring, as bamboo shoots emerge from the soil, the local villagers collect some of the shoots that are less likely to grow into mature bamboo. They process these shoots into dried bamboo shoots, bamboo shoot tips, or sliced bamboo shoots. Bamboo shoots are delicious and have long been regarded as celebrated specialty of Jiuhuashan.

죽순은 대나무의 새싹이다. 모죽의 생장 과정 중, 계절에 따라 세 종류의 죽순, 즉 겨울 죽순, 봄 죽순, 채찍 죽순이 생긴다. 겨울 죽순은 진정한 의미에서 겨울의 죽순’이 아니라 지하 씨앗의 발육이 팽창하여 아직 나오지 않은 봄 죽순이다. 즉 겨울 죽순은 봄 죽순의 초기 형태이고 봄 죽순은 겨울 죽순의 장래 모습이다. 채찍 죽순은 대나무 밑채찍의 선단 부분이 앞으로 자라 여름에 자라는 어린 끝부분을 말한다.

구화산에서는 대나무가 많이 생산되는데 겨울, 봄철에 죽순이 나올 때마다 산사람들은 일부 쉽게 대나무가 되지 않는 죽순을 채취하여 죽순줄기, 죽순끝, 죽순옷 또는 죽순조각으로 가공한다.죽순은 맛이 신선하고 맛있어서 예로부터 구화산의 유명한 특산품이다.
